600gr. Emulsifier derived from saccharose and recovered from the reaction of saccharose and fatty acids (sucroester). This product is widely used in Japan. Due. Its high stability as an emulsifier, it is used to make "oil in water" emulsions. The product is reminiscent of water and must therefore first be dissolved in water before use. It also has airy qualities.
Powdered. Insoluble in fat. It is dissolved in water without the need to add heat - however, it dissolves faster in heat. Once dissolved, slowly add it to the fat.
