17 g. Ground sugar
142 g water (30 - 35 degrees)
cooked to 117 degrees:
84 grams of water
250 grams of ground sugar
125 grams of glucose
The cooked syrup is slowly poured in at the 1st gear, then whipped to completion at the highest gear.
